Blueberry Muffin bites

These blueberry muffin bites taste like fresh-baked muffins but require no oven. Perfect breakfast on-the-go.

What you need

  • 1 cup rolled oats
  • 1/2 cup dried blueberries
  • 1/2 cup cashews or almonds
  • 3 tablespoons honey
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

How to make it

  1. Add all ingredients to food processor
  2. Pulse until mixture sticks together
  3. Roll into small balls
  4. Optional: press a few dried blueberries on top
  5. Refrigerate for 30 minutes
  6. Store in the fridge for up to 2 weeks

Why this works

No baking, pure muffin flavor. The dried blueberries concentrate the flavor, and the oats create that muffin texture. Perfect for breakfast or brunch.

Practical tip: Use unsweetened dried blueberries if possible. Fresh blueberries won't work here. These taste like actual blueberry muffins.
