These lemon poppy seed oat bars bring classic muffin flavor to a wholesome bar.
Ingredients
- 200g rolled oats
- 100g butter
- 75g honey
- 50g light brown sugar
- Zest of 2 lemons
- 2 tbsp lemon juice
- 2 tbsp poppy seeds
- 1 tsp vanilla extract
- Pinch of salt
Method
- Preheat oven to 180°C (160°C fan)
- Line a 20cm square tin with baking paper
- Melt butter, honey, and sugar in a pan
- Remove from heat, stir in lemon zest, juice, and vanilla
- Mix in oats, poppy seeds, and salt
- Press firmly into tin
- Bake for 20-25 minutes until golden
- Cool completely before cutting
