These lemon poppy seed oat bars bring classic muffin flavor to a wholesome bar.

Ingredients

  • 200g rolled oats
  • 100g butter
  • 75g honey
  • 50g light brown sugar
  • Zest of 2 lemons
  • 2 tbsp lemon juice
  • 2 tbsp poppy seeds
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat oven to 180°C (160°C fan)
  2. Line a 20cm square tin with baking paper
  3. Melt butter, honey, and sugar in a pan
  4. Remove from heat, stir in lemon zest, juice, and vanilla
  5. Mix in oats, poppy seeds, and salt
  6. Press firmly into tin
  7. Bake for 20-25 minutes until golden
  8. Cool completely before cutting
