Apricot Almond oat bars

These apricot almond oat bars combine dried fruit and nuts for a sophisticated treat.
Ingredients
- 200g rolled oats
- 100g butter
- 75g honey
- 50g light brown sugar
- 75g dried apricots (chopped)
- 50g flaked almonds
- 1 tsp vanilla extract
- Pinch of salt
Method
- Preheat oven to 180°C (160°C fan)
- Line a 20cm square tin with baking paper
- Melt butter, honey, and sugar in a pan
- Remove from heat, stir in vanilla
- Mix in oats, chopped apricots, half the almonds, and salt
- Press into tin, sprinkle remaining almonds on top
- Bake for 20-25 minutes until golden
- Cool completely before cutting
Batch Baking
