What You'll Need
- 800g carrots, peeled and chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 40g fresh ginger, peeled and grated
- 1 medium potato, peeled and cubed
- 1 litre vegetable stock
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- Sea salt & black pepper
- Optional: 100ml coconut cream for richness
The Method
Heat olive oil in a large pot over medium heat. Add onion and cook for 5-6 minutes until soft. Add garlic, ginger, and cumin. Cook for 1-2 minutes until fragrant. Add carrots and potato cubes. Stir to coat with spices. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 25-30 minutes until vegetables are very tender. Use a hand blender to blend until completely smooth. Season with salt and pepper to taste.

How to Freeze & Store
