A Creamy Cashew Alfredo Pasta Sauce Base for Your Week
This freezer-friendly cashew alfredo blend pasta sauce is designed for anyone who values structure over speed. One calm Sunday prep gives you three effortless dinners—no decision fatigue, no weeknight stress. Just nourishing meals when you need them.
What You'll Need
- 200g raw cashews, soaked in water for 4 hours (or overnight)
- 300ml unsweetened almond milk (or oat milk)
- 3 cloves garlic
- 3 tbsp nutritional yeast
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- Sea salt & black pepper
- Optional: fresh parsley or basil
The Method
Drain and rinse soaked cashews. Add cashews, almond milk, garlic, nutritional yeast, lemon juice, olive oil, and Dijon mustard to a high-speed blender. Blend on high for 2-3 minutes until completely smooth and creamy. Season with salt and pepper to taste. For a warmer sauce, transfer to a pan and heat gently, stirring constantly. If using fresh herbs, stir in at the end.
✨ Optional: Extra Richness
For an even creamier finish: add 2 tbsp tahini or 1 tbsp white miso paste before blending.
How to Freeze & Store
Cool the sauce completely. Portion into silicone freezer trays for structured, calm weeknights (1-cup portions work perfectly for single servings). Freeze overnight. Once solid, transfer to labeled freezer bags or containers. Store up to 2 months.
Shelf life: 2 months frozen | 4 days refrigerated
How to Use During the Week
Thaw one portion overnight in the fridge, then reheat gently in a pan with a splash of plant milk. Serve with wholegrain pasta, spelt pasta, or brown rice pasta for a more nourishing, steady-energy option.
Other ways to use:
- Toss with roasted vegetables and chickpeas
- Use as a base for creamy soups
- Drizzle over baked potatoes
- Stir into risotto for extra creaminess
