These cherry bakewell oat bars bring the beloved British tart flavor to a wholesome bar.

Ingredients

  • 200g rolled oats
  • 100g butter
  • 75g honey
  • 50g light brown sugar
  • 75g glacé cherries (chopped)
  • 50g flaked almonds
  • 1 tsp almond extract
  • Pinch of salt

Method

  1. Preheat oven to 180°C (160°C fan)
  2. Line a 20cm square tin with baking paper
  3. Melt butter, honey, and sugar in a pan
  4. Remove from heat, stir in almond extract
  5. Mix in oats, chopped cherries, half the almonds, and salt
  6. Press into tin, sprinkle remaining almonds on top
  7. Bake for 20-25 minutes until golden
  8. Cool completely before cutting
