  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced

  • 1 tsp dried basil
  • 1 bay leaf
  • Pinch of sugar (to balance acidity)
  • Sea salt & black pepper

The Method

Heat olive oil in a large pan over medium heat. Add onion and cook for 5-6 minutes until soft and translucent. Add garlic and cook for 1 minute until fragrant.
