A Creamy Corn Chowder Base for Your Week
This freezer-friendly corn chowder is designed for busy professionals who value structure over speed. One calm Sunday prep gives you three effortless meals—no decision fatigue, no weeknight stress. Just nourishing comfort when you need it.
What You'll Need
- 400g sweetcorn (tinned or frozen)
- 3 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 750ml vegetable stock
- 200ml single cream
- 2 tbsp butter
- 2 tbsp plain flour
- 1 tsp smoked paprika
- Sea salt & black pepper
- Fresh parsley (optional)
The Method
Heat butter in a large pot over medium heat. Add onion and celery, cook for 8-10 minutes until soft. Add garlic and smoked paprika, cook for 1 minute. Sprinkle flour over vegetables and stir for 2 minutes. Gradually pour in vegetable stock, stirring constantly. Add potato cubes and bring to a boil. Reduce heat and simmer for 15 minutes until potatoes are tender. Add sweetcorn and simmer for 5 more minutes. Use a hand blender to partially blend the soup (leave some texture with whole corn and potato). Stir in cream. Season with salt and pepper. If using fresh parsley, stir in at the end.

For more substance: add 100g diced bacon or pancetta at the beginning for a smoky, savory depth (freezes perfectly).
How to Freeze & Store
Cool the soup completely. Choose your storage method: Freezer: Portion into large silicone soup cube trays (each cube holds 1.5-2 cups). Freeze overnight, then transfer to labeled freezer bags. Stores up to 3 months. Refrigerator: Portion into glass jars or containers. Stores up to 4 days.

How to Use During the Week
Thaw one soup cube overnight in the fridge (or use refrigerated portion), then reheat gently in a pot. Serve with crusty sourdough, wholegrain bread, or crackers for a complete, nourishing meal.
