A Rich Creamy Mushroom Soup Base for Your Week
This freezer-friendly creamy mushroom soup is designed for busy professionals who value structure over speed. One calm Sunday prep gives you three effortless meals—no decision fatigue, no weeknight stress. Just nourishing comfort when you need it.
What You'll Need
- 500g mixed mushrooms (chestnut, button, or portobello), sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 750ml vegetable stock
- 200ml single cream
- 2 tbsp butter
- 2 tbsp plain flour
- 1 tbsp extra virgin olive oil
- 1 tsp dried thyme
- Sea salt & black pepper
- Fresh parsley (optional)
The Method
Heat butter and olive oil in a large pot over medium heat. Add sliced mushrooms and cook for 8-10 minutes until golden and liquid has evaporated. Remove half the mushrooms and set aside (for texture). Add onion to pot and cook for 5-6 minutes until soft. Add garlic and thyme, cook for 1 minute. Sprinkle flour over vegetables and stir for 2 minutes. Gradually pour in vegetable stock, stirring constantly. Bring to a boil, then reduce heat and simmer for 15 minutes. Use a hand blender to blend until smooth. Stir in cream and reserved mushrooms. Season with salt and pepper. If using fresh parsley, stir in at the end.

For richer flavor: add 2 tbsp dry sherry or white wine when cooking the mushrooms for extra depth.
How to Freeze & Store
Cool the soup completely. Choose your storage method: Freezer: Portion into large silicone soup cube trays (each cube holds 1.5-2 cups). Freeze overnight, then transfer to labeled freezer bags. Stores up to 3 months. Refrigerator: Portion into glass jars or containers. Stores up to 4 days.

How to Use During the Week
