These espresso oat bars bring coffee shop flavor to wholesome oats.

Ingredients

  • 200g rolled oats
  • 100g butter
  • 75g maple syrup
  • 50g light brown sugar
  • 2 tbsp instant espresso powder
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat oven to 180°C (160°C fan)
  2. Line a 20cm square tin with baking paper
  3. Melt butter, maple syrup, and sugar in a pan
  4. Remove from heat, whisk in espresso powder, cocoa, and vanilla
  5. Mix in oats and salt until well coated
  6. Press firmly into tin
  7. Bake for 20-25 minutes
  8. Cool completely before cutting
