A Classic French Onion Soup Base for Your Week
This freezer-friendly French onion soup is designed for busy professionals who value structure over speed. One calm Sunday prep gives you three effortless meals—no decision fatigue, no weeknight stress. Just nourishing comfort when you need it.
What You'll Need
- 6 large onions, thinly sliced
- 3 cloves garlic, minced
- 1.2 litres beef stock (or vegetable stock)
- 150ml dry white wine
- 3 tbsp butter
- 1 tbsp extra virgin olive oil
- 2 tsp fresh thyme leaves
- 1 bay leaf
- 1 tsp sugar
- Sea salt & black pepper
- Note: Add bread and cheese fresh when serving, not before freezing
The Method
Heat butter and olive oil in a large pot over medium heat. Add sliced onions and sugar. Cook for 30-40 minutes, stirring occasionally, until onions are deeply caramelized and golden brown (this is key for flavor). Add garlic and thyme, cook for 1 minute. Pour in white wine and simmer for 3-4 minutes until reduced. Add beef stock and bay leaf. Bring to a boil, then reduce heat and simmer for 25-30 minutes. Remove bay leaf. Season with salt and pepper.
✨ Important: Bread & Cheese
Do not add bread or cheese before freezing. When serving: toast baguette slices, top with Gruyère cheese, and grill until melted. Place on top of reheated soup.
How to Freeze & Store
Cool the soup completely (without bread or cheese). Choose your storage method: Freezer: Portion into large silicone soup cube trays (each cube holds 1.5-2 cups). Freeze overnight, then transfer to labeled freezer bags. Stores up to 3 months. Refrigerator: Portion into glass jars or containers. Stores up to 5 days.

How to Use During the Week
Thaw one soup cube overnight in the fridge (or use refrigerated portion), then reheat gently in a pot. Toast baguette slices, top with Gruyère, and grill until melted. Serve soup in bowls topped with cheesy bread.
