A Fresh Basil Pesto Pasta Sauce Base for Your Week
This freezer-friendly fresh green pesto pasta sauce is designed for busy professionals who value structure over speed. One calm Sunday prep gives you three effortless dinners—no decision fatigue, no weeknight stress. Just nourishing meals when you need them.
What You'll Need
- 100g fresh basil leaves (about 3 large bunches)
- 50g pine nuts (or walnuts for a budget-friendly option)
- 50g Parmesan cheese, grated
- 2 cloves garlic
- 120ml extra virgin olive oil
- Juice of half a lemon
- Sea salt & black pepper
The Method
Toast pine nuts in a dry pan over medium heat for 2-3 minutes until golden and fragrant. Let cool. Add basil leaves, toasted pine nuts, Parmesan, garlic, and lemon juice to a food processor. Pulse until roughly chopped. With the motor running, slowly drizzle in olive oil until you reach your desired consistency. Season with salt and pepper to taste.
✨ Optional: Creamy Version
For a richer, silkier finish: stir in 2–3 tbsp mascarpone or cream cheese at the end.
How to Freeze & Store
Portion into silicone freezer trays for structured, calm weeknights (2-tablespoon portions work perfectly for single servings). Drizzle a thin layer of olive oil over each portion to prevent browning. Freeze overnight. Once solid, transfer to labeled freezer bags or containers. Store up to 3 months.
Shelf life: 3 months frozen | 5 days refrigerated (with olive oil layer on top)
How to Use During the Week
Thaw one portion at room temperature for 15 minutes, or stir directly into hot pasta. Serve with wholegrain pasta, spelt pasta, or brown rice pasta for a more nourishing, steady-energy option.
Other ways to use:
- Stir into warm quinoa or couscous
- Spread on sourdough with roasted tomatoes
- Toss with roasted vegetables
- Swirl into soup for extra flavor
