What You'll Need

  • 500g ground beef (or mix of beef and pork)
  • 1 medium onion, finely chopped
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 4 cloves garlic, minced
  • 800g tinned tomatoes
  • 3 tbsp tomato paste
  • 200ml red wine (or beef stock)
  • 2 tbsp extra virgin olive oil
  • 1 bay leaf
  • 1 tsp dried oregano
  • Sea salt & black pepper

The Method

Heat olive oil in a large heavy-bottomed pan over medium-high heat. Add ground meat and cook for 8-10 minutes until browned, breaking it up with a wooden spoon. Remove meat and set aside. In the same pan, add onion, carrots, and celery. Cook for 8-10 minutes until soft. Add garlic and cook for 1 minute. Stir in tomato paste and cook for 2 minutes. Pour in red wine and let it reduce by half. Add tinned tomatoes, browned meat, bay leaf, and oregano. Season with salt and pepper. Simmer low and slow for 1.5-2 hours, stirring occasionally. Remove bay leaf before storing.

How to Freeze & Store
