What You'll Need

  • 200g dried green or brown lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced

  • 400g tinned tomatoes
  • 1 litre vegetable stock
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Sea salt & black pepper
  • Fresh parsley (optional)

The Method

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 8-10 minutes until soft. Add garlic, cumin, and smoked paprika. Cook for 1 minute until fragrant. Add lentils, tinned tomatoes, vegetable stock, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender. Season with salt and pepper. Remove bay leaf. If using fresh parsley, stir in at the end.
