Ingredients

  • 1 cup cooked quinoa
  • 2 cups baby spinach
  • 1/2 cup roasted chickpeas
  • 1/2 cucumber, sliced
  • 1/2 avocado, sliced
  • 2 tablespoons lemon tahini dressing

Lemon Tahini Dressing

  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 2-3 tablespoons water to thin
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package directions and let cool.
  2. For roasted chickpeas: toss drained chickpeas with olive oil, salt, and paprika. Roast at 200°C (400°F) for 20-25 minutes until crispy.
  3. Make dressing: whisk tahini, lemon juice, olive oil, garlic, and water until smooth and pourable.

  5. Drizzle with lemon tahini dressing.
