Ingredients
- 240ml (1 cup) coconut milk (from a carton or canned)
- 3 tablespoons chia seeds
- 1 tablespoon maple syrup or honey
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 1 ripe mango, diced
- 2 tablespoons toasted coconut flakes
Instructions
- Whisk together coconut milk, chia seeds, maple syrup, vanilla, and salt.
- Pour into jars or bowls.
- Refrigerate for at least 4 hours or overnight, stirring once after 30 minutes if possible.
- Before serving, top with fresh mango and toasted coconut flakes.
Notes
For extra creaminess, use full-fat canned coconut milk. Toast coconut flakes in a dry pan over medium heat for 2-3 minutes until golden. Frozen mango works well when fresh isn't available. Keeps for up to 5 days — your gentle breakfast ritual, ready when you are.
