This salad works as a side dish or a light lunch. The mango adds natural sweetness, the lime keeps it fresh, and the chili gives it a gentle kick.
What you need
- 1 ripe mango (not too soft)
- 1 cucumber
- 1 lime (juice + zest)
- Fresh cilantro or mint
- Optional: red chili flakes or fresh chili
- Salt
How to make it
- Peel and dice the mango into bite-sized pieces
- Dice the cucumber (no need to peel if organic)
- Chop the herbs roughly
- Mix everything in a bowl
- Squeeze lime juice over it, add zest
- Add a pinch of salt and chili if using
- Toss gently and serve
