Ingredients
- 1 1/2 cups cooked chickpeas
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 60g (2 oz) feta cheese, crumbled
- 2 tablespoons lemon olive oil dressing
- Fresh parsley for garnish
Lemon Olive Oil Dressing
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- If using canned chickpeas, drain and rinse well.
- Make dressing: whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Assemble bowl: combine chickpeas, cherry tomatoes, cucumber, olives, and feta.
- Drizzle with lemon olive oil dressing and toss gently.
- Garnish with fresh parsley.
