A Hearty Pea & Ham Soup Base for Your Week

This freezer-friendly pea & ham soup is designed for busy professionals who value structure over speed. One calm Sunday prep gives you three effortless meals—no decision fatigue, no weeknight stress. Just nourishing comfort when you need it.

What You'll Need

  • 500g frozen peas (or fresh)
  • 200g cooked ham, diced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 litre vegetable stock
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Sea salt & black pepper
  • Fresh mint (optional)

The Method

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 8-10 minutes until soft. Add garlic and thyme, cook for 1 minute. Add frozen peas, diced ham, vegetable stock, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes. Remove bay leaf. Use a hand blender to partially blend the soup (leave some texture with whole peas and ham). Season with salt and pepper. If using fresh mint, stir in at the end.

✨ Optional: Extra Heartiness

For more substance: add 100g pearl barley or split peas at the beginning for extra texture and protein (both freeze perfectly).

How to Freeze & Store

Cool the soup completely. Choose your storage method: Freezer: Portion into large silicone soup cube trays (each cube holds 1.5-2 cups). Freeze overnight, then transfer to labeled freezer bags. Stores up to 3 months. Refrigerator: Portion into glass jars or containers. Stores up to 4 days.

Shelf life: 3 months frozen | 4 days refrigerated

How to Use During the Week

Thaw one soup cube overnight in the fridge (or use refrigerated portion), then reheat gently in a pot. Serve with crusty sourdough, wholegrain bread, or crackers for a complete, nourishing meal.

Other ways to use:

  • Top with fresh mint and cracked black pepper
  • Add extra diced ham when serving
  • Serve with grated cheese
  • Drizzle with cream for richness
