Ingredients
- 2 cups cooked quinoa
- 1 cup roasted broccoli florets
- 1 cup roasted cherry tomatoes
- 1 cup chickpeas
- 1/4 cup pumpkin seeds
- 3 tablespoons lemon herb dressing
- Fresh spinach (add daily)
Lemon Herb Dressing
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1 garlic clove, minced
- Salt and pepper
Instructions
- Cook quinoa in batch and let cool.
- Roast broccoli and cherry tomatoes at 200°C (400°F) for 20 minutes.
- Make dressing: whisk all ingredients until combined.
- Meal Prep (for 5 days): Divide quinoa, roasted vegetables, and chickpeas into 5 containers. Store dressing separately.
- When ready to eat: add fresh spinach, drizzle with dressing, top with pumpkin seeds.
