Ingredients

  • 1 cup cooked farro or quinoa
  • 1 cup roasted butternut squash cubes
  • 1 cup roasted Brussels sprouts, halved
  • 1/2 cup dried cranberries
  • 1/4 cup pecans, toasted
  • 3 tablespoons maple Dijon dressing
  • Fresh arugula (add daily)

Maple Dijon Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper

Instructions

  1. Cook farro or quinoa in batch and let cool.
  2. Roast butternut squash and Brussels sprouts at 200°C (400°F) for 25-30 minutes.
  3. Toast pecans in a dry pan for 3-4 minutes.
  4. Make dressing: whisk all ingredients until combined.
  5. Meal Prep (for 5 days): Divide grains, roasted vegetables, cranberries, and pecans into 5 containers. Store dressing separately.
  6. When ready to eat: add fresh arugula and drizzle with maple Dijon dressing.
