What You'll Need

  • 4 large red peppers
  • 3 cloves garlic, unpeeled
  • 1 small onion, roughly chopped
  • 400g tinned tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • Pinch of chili flakes (optional)
  • Sea salt & black pepper
  • Fresh basil (optional)

The Method

Preheat oven to 200°C. Place whole red peppers and unpeeled garlic cloves on a baking tray. Roast for 30-35 minutes until peppers are charred and soft. Remove from oven and place peppers in a bowl, cover with cling film, and let steam for 10 minutes. Peel off skins, remove seeds, and roughly chop. Squeeze roasted garlic from skins. Heat olive oil in a pan, add onion and cook until soft. Add roasted peppers, garlic, tinned tomatoes, smoked paprika, and chili flakes. Simmer for 15-20 minutes. Blend until smooth. Season with salt and pepper.
