What You'll Need
- 600g broccoli florets (fresh or frozen)
- 1 medium onion, chopped
- 2 cloves garlic, minced

- 750ml vegetable stock
- 200ml whole milk
- 150g mature cheddar cheese, grated
- 2 tbsp butter
- Pinch of nutmeg
- Sea salt & black pepper
The Method
Melt butter in a large pot over medium heat. Add onion and cook for 5-6 minutes until soft. Add garlic and cook for 1 minute until fragrant. Add potato cubes and broccoli florets. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are very tender. Use a hand blender to blend until completely smooth. Stir in milk and grated cheddar cheese until melted and creamy. Add nutmeg. Season with salt and pepper to taste.
