These watermelon lime mint cubes bring instant summer refreshment to your water, cocktails, or mocktails. The watermelon is naturally sweet and hydrating, the lime adds zing, and the mint keeps it cool and crisp.
What you need
- 2 cups fresh watermelon chunks (seedless)
- 1 lime (juice + zest)
- 1 handful fresh mint leaves
- Optional: a splash of water if too thick
How to make it
- Cut watermelon into chunks, remove any seeds
- Wash the mint leaves
- Juice the lime and add zest
- Blend watermelon, lime juice, zest, and mint until smooth
- Add a splash of water if the mixture is too thick
- Pour into ice cube trays
- Freeze for at least 4 hours
